Lemon chicken

Ok, so stop me if you don't want food dishes posted on here, but it is the easiest way to send to my friend's w/o spamming up your email :)
I made this tonight and it was good so here it is...
Lemon chicken ( I doubled this recipe to make it worth the effort)
4 boneless chicken breast
Flour for dredging
2 Tbs. butter
2 Tbs. olive oil
3 Tbs. flour
Juice of 2 lemons
3 cups chicken broth
Pound chicken breasts to a uniform thickness.
Dredge lightly in flour; shake off excess. In a large pan over med-high heat melt butter and oil until it sizzles and then saute the chicken until cooked. Remove and set aside the chicken.
Whisk flour into broth and cook until it boils (about 1 min) Add lemon juice to broth and whisk mixture into the saute pan. Reduce to a simmer. Add chicken and heat through. Season with salt and pepper (I skipped this)
work time:30 min. total time:50 min.
I made rice and veggies with it thinking it was more chinese-ish, but noodles or potatoes would work well because it is not overly lemon flavored and the sauce is pretty thick (not watery).
Rice was good too...Yummy :)

So big!

Gianna had her 18 month check up...weight: 28.1 (91%) Height: 34 and 3/4 (99%)
She is growing well and didn't cry at the shot, but did cry when the male nurse talked to her and when the Dr. wanted to hold her. :)

Gianna is 18 months old today!

I'll post a better photo later...just didn't want to miss her 18 month day :) She is obsessed with my sheep rug and drags it out everytime I take her photo. She yells...sheep!
The last couple weeks have been a huge change in her being able to talk and tell us what she wants (and tattle on Jady). I have to say it is really nice knowing what she is trying to tell us.
She loves Jady and tries to keep up with her and all the dance moves jadyn tries to teach her. She is so loving and sweet...can't believe a year and a half have gone by!
